Pressure Cooker Ground Beef Chili

Instructions

  1. Heat oil in pressure cooker over medium-high heat until shimmering. Brown 1/4 of the ground beef, remove and set aside. Drain all but 1 tablespoon fat from cooker.
  2. Cook onion until lightly golden, about 5 minutes. Season with salt. Add garlic and spices, cook until fragrant, about 1 minute.
  3. Add tomato paste and cook until slightly darkened, about 1 minute.
  4. Return browned beef to cooker. Add uncooked beef, crushed tomatoes, and stir. Season with salt. Add coffee, chocolate, fish sauce, and bay leaf. Bring to a simmer, stirring well.
  5. Seal cooker, bring to high pressure, and cook for 20 minutes. Quick-release pressure.
  6. Discard bay leaf. Stir in drained beans. Season with salt and pepper. Simmer for 5 minutes.
  7. Adjust consistency if needed. Serve with desired toppings.
